SLST Recipe – One Pot Lemon Herb Chicken

One Pot Lemon Herb Chicken Recipe

-4 Boneless, skinless breasts
-2 TBSP Olive Oil
-Salt & Pepper
-1 Cup uncooked Quiona
-2 1/4 Cups Chicken Broth
-Juice of 1 lemon
-1 TSP Italian Seasoning


  1. Heat olive oil over medium heat in a large pan or pot with a lid

  2. Season chicken with salt, pepper and Italian seasoning

  3. Brown chicken in oil for 1-2 minutes on each side (chicken should NOT be cooked through)

  4. Transfer chicken to plate

  5. Add Quinoa, chicken broth, lemon juice & Italian seasoning to pot

  6. Place chicken on top, cover & summer on medium-low heat for up to 30 minutes until liquid is dissolved

  7. Serve immediately.
