Fitness Friday – Cucumber, Tomato & Avocado Salad

Our Certified Personal Trainer & Level One Precision Nutritionist, Jen Myers, occasionally shares some of her healthy and delicious recipes with us. Jen made and brought this delicious recipe to a work get-together this weekend. It is super simple to make and perfectly refreshing during this hot weather we’ve been seeing here in Paso!

Tomato avocado cucumber salad

Ingredients

1 English Cucumber
4 Roma Tomatoes
3 Ripe Avocados
1/2 Red Onion
1/4 Cup Cilantro
Juice of 1 Lemon
Salt & Pepper to taste
2 TBSP. Extra Virgin Olive Oil

Instructions

1. Slice cucumbers, tomatoes, onion & avocado
2. Chop Cilantro
3. Place in a large salad bowl
4. Toss with olive oil, lemon juice, salt & pepper
5. Serve & enjoy!
