Fitness Friday – Quinoa

Inspired by a recent recipe by our Level One Precision Nutritionist, Jen Myers, we’re all about Quinoa on this Fitness Friday!

Quinoa is a grain crop grown primarily for its edible seeds. It is high in protein, and is tolerant of dry soil. After harvest, the seeds must be processed to remove the bitter-tasting coating. The seeds are in general cooked the same way as rice and can be used in a wide range of dishes. 

Quinoa is a rich source of the B Vitamins thiamine, riboflavin, Vitamin B6 and folate. It is a rich source of dietary minerals, iron, magnesium, phosphorus and zinc. It is gluten-free and considered to be easy to digest.

Quinoa is being used in lots of variations of dishes. From a delicious and modest Cheesy Broccoli Quinoa Bite, like the one pictured, to well known restaurants. Our local restaurant, Villa Creek, currently has a Farmer’s Market salad featuring Peaches, Raspberries and Quinoa. We asked the Chef De Cuisine, Sean Ellison, why he likes to work with Quinoa. Sean Says, “It’s a great substitute for heavy starches on lots of dishes ( like potatoes or rice) and it still allows flavors to shine. Its nutty and earthy, low in carbs and high in protein. Great in salads for texture, and good with almost anything. Toast it lightly and rinse it before cooking for best flavor. We like a 1 -1 quinoa to liquid ratio.”

Long story short, we love Quinoa!
