Fitness Friday – Green Goddess Quinoa Salad

Green Goddess Quinoa Salad Recipe

Ingredients:

2 Cups cooked quinoa in Veg. or Chicken broth

2 Cups halved cherry tomatoes

2 Cups spinach leaves

1/2 Cup or more of Magic Green Sauce

1 Pint of fresh mozzarella, cut to bite size

 

Magic Green Sauce Ingredients:

1 Avocado

1 Cup packed parsley & cilantro leaves combined

1 Jalapeno, ribs & seeds removed

2 Cloves of garlic

Juice of one lime

1/2 Cup water

1/2 Cup olive oil

1 Tsp. Salt

 

Instructions:

  1. Cook quinoa in advance, if possible and cool completely

For the Magic Green Sauce:

  1. Pulse all sauce ingredients together in food processor until smooth.
  2. Toss all ingredients together to combine.
