Fitness Friday – “Faker-Tots”
Happy Fitness Friday!
It’s been awhile since we’ve shared one of our Level One Precision Nutritionists, Jen Myers, recipes! So, here is a fun one for you. It’s lovingly been nicknamed “Fater-Tots,” courtesy of our Physical Therapist Mackenzie Dake. These “Faker-Tots” are super easy to make and eat!
Broccoli-Cheese Tater Tots
2 cups Broccoli florets
1/2 diced sweet onion
2/3 cup shredded cheddar cheese
1/2 cup panko bread crumbs
salt & pepper
Preheat oven to 400 degrees and line a baking sheet with a piece of parchment paper.
Steam broccoli florets in microwave for 2 minutes and chop into small pieces.
In a large bowl, combine all ingredients and mix well.
Scoop a spoonful of mixture in your hands and shape it to resemble a tater tot. Repeat until all mixture has been used.
Bake for 20 minutes and enjoy right out of the oven!
